Abstract
[Resumen] La Comisión del Codex Alimentarius, la Oficina Internacional de Epizootias y la
Convención Internacional de Protección Fitosanitaria constituyen, hoy en día, los principales
Organismos internacionales que se encargan de la elaboración de las normas
relativas a la seguridad alimentaria de la persona humana, armonizadas a escala mundial.
Normas que parecen estar informadas e inspiradas por unos principios que tratan
de proteger la salud alimentaria. En fin, se trata de unas normas y unos principios que
conforman un Derecho internacional alimentario, un Derecho que busca proteger la
salud de las personas y de los animales, y la preservación de los vegetales.
[Abstract] Nowadays, the Codex Alimentarius Commission, the World Organisation for Animal Health, and the International Plant Protection Convention represent the main International Organisms that are taking charge of the elaboration of norms related with the food safety of the people. These norms are harmonized universally and seem to be informed and inspired in a few principles that are seeking the food health protection. It is about norms and principles that form an International Food Law. It is about a Law that looks both for the health of persons and animals and for the plants preservation.
