Abstract
[Resumo] No actual escenario de crise eco-social, o sistema agroalimentario industrial globalizado xoga un papel decisivo, tanto polos impactos que xera, como pola súa vulnerabilidade ante as consecuencias derivadas. Por este motivo, a dieta revélase como un elemento educativo-ambiental de especial relevancia, pois alberga un significativo potencial de redución da pegada ecolóxica e é un factor chave para a transición cara sistemas agroalimentarios sustentables. Neste sentido, na provincia da Coruña como marco territorial, a través dun estudo de casos múltiple constatamos a existencia de iniciativas locais pioneiras na disposición de espazos e canles alternativos de consumo responsable de alimentos. Estas constitúen contextos de innovación comunitaria que achegan boas prácticas socioeducativas para a promoción da eco-cidadanía e a construción da cultura da sustentabilidade en torno á cuestión alimentaria. Como resultados de investigación, describimos algunhas das principais características das iniciativas analizadas, así como tamén presentamos unha aproximación ás concrecións da súa dimensión socioeducativa. En base a estas, a modo de consideracións finais, achegamos unhas orientacións xerais para trazar unha proposta de educación do consumo alimentario dende a interface entre os devanditos enfoques da eco-cidadanía e a cultura da sustentabilidade.
[Abstract] In the current scenario of eco-social crisis, globalized industrial agri-food system plays a decisive role, both because of the impacts generated and because of its vulnerability to their consequences. For this reason, the diet is revealed as an educational environmental element of particular relevance, because it has a significant potential for reducing the ecological footprint and because it is a key element for the transition to sustainable agrifood systems. In this sense, in the province of A Coruña as a territorial framework, through a multiple case study we verify the existence of local initiatives pioneering in the provision of alternative spaces and channels of responsible food consumption. These are contexts of community innovation that provide good socio-educational practices for the promotion of eco-citizenship and the construction of the culture of sustainability around the food issue. As research results, we describe some of the main characteristics of the analyzed initiatives, as well as presenting an approach to the concreteness of their socio-educational dimension. Based on them, as final considerations, we provide some general guidelines to outline a proposal for education of food consumption from the interface between the aforementioned approaches to eco-citizenship and the culture of sustainability.
