Abstract
[Resumen] En los últimos años la gastronomía se ha convertido en un elemento indispensable para conocer la cultura y el modo de vida de un territorio al responder a valores clásicos que se asocian a las nuevas tendencias en el turismo: respeto a la cultura y a la tradición, vida saludable, autenticidad, sostenibilidad, experiencia, etc.
La gastronomía representa por tanto una oportunidad para dinamizar y diversificar el turismo, impulsar el desarrollo económico local, implicar a diversos sectores profesionales (productores, cocineros, mercados, etc.), e incorporar nuevos usos al sector primario. Ante este contexto el informe "Global Report on Food Tourism" elaborado por la Organización Mundial del Turismo establece diez grandes tendencias globales en el desarrollo del turismo gastronómico, de modo que el objetivo de este artículo se fundamenta en analizar dichas tendencias en el caso de Argentina con la finalidad de determinar su situación ante esta tipología turística.
[Abstract] Recently gastronomy has become an indispensable element to know the culture and lifestyle of a territory. Gastronomy expresses all the traditional values associated to new trends in tourism: respect for culture and tradition, a healthy lifestyle, authenticity, sustai nability, experience, etc. Gastronomy is therefore an opportunity to revitalize and diversify tourism, promotes local economic development, involves different professional sectors (producers, chefs, markets, etc.), and incorporates new uses to the primary sector. Given this context the "Global Report on Food Tourism"(report prepared by the World Tourism Organization) provides ten major global trends in the development of food tourism. So the aim of this paper is based on analyzing these trends in the case of Argentina in order to determine their status with this type of tourism.
